Former ice cream vendor here, nuking ice cream in a microwave is a valid strategy, leaving it on the counter for too long runs the risk of moisture from the air being introduced into the ice cream itself, once frozen that extra moisture will turn to ice, causing the ice cream to gain a gritty texture.

Thawing icecream out is not that bad. It makes it softer to scoop out so you dont have to be frustrated with a block of literal ice.
